Croissant-Wich with Bacon, Egg & Cream Cheese!

Breakfast is served! Now, anyone who knows me, knows that I am not much of a breakfast person. I am a morning person who jumps right into the swing of things for the day and by the time I think about food, it is damn near lunch time.


However, when I do wake up and decide to take some much needed time to myself, that is when I think of breakfast and in a major way. It is the meal I tend to scratch off my list, so when it actually makes it on that list, I need to make sure it is top notch.


This croissant-wich has the best of everything in my opinion, freshly baked croissants from the BJ's bakery. They were hot out the oven when I went searching for these bad boys or should I say bad girls. They were soft, buttery and flakey just the way a croissant should be. The higher the butter & fat content, the better.


Now, lets talks about the ingredients:

  • Large Croissants (Freshly Baked)

  • Large Brown or White Eggs (Your Preference)

  • Chive & Onion Cream Cheese

  • Fresh Arugula

  • Smoked Bacon

  • Salt & Pepper

Instructions:

Heck, what instructions could I give you on something so insanely simple. You can choose to lightly toast your croissant or leave it as is. You cook the eggs to your liking, I prefer mine to be medium fried with a smidgen of runny yolk. But you can scramble, make a. mini omelet, poach or slice up a boiled egg, skies the limit. I cook my bacon in the oven because I hate to get grease everywhere on the stove. I pre-heat it at 350 degrees and since I like my bacon crispy, I leave it in there for 20 minutes, turning once half way through. Once done, I lay them flat on a paper towel. While my bacon is in the oven, I rinse my arugula thoroughly and pat it dry with a paper towel. Then it is time to assemble, smear as much chive and onion cream cheese as your heart desires and whatever your breath can handle, because while this is a delicious breakfast, your breath will be on high alert, ha! Add your arugula, bacon and eggs, sprinkle some salt and pepper and enjoy!
